Land Records & Tax Rolls
Land records is the term used to collectively describe deeds and mortgages, which document the sale of a property from one person to another.
The indexes are referred to as Grantor/Grantee Indexes (Grantor = seller; Grantee = Buyer) and are arranged alphabetically by the first letter of surname.

Tax rolls document the assessment of real estate and personal property and the collection of taxes.
Tax rolls are not indexed. They are arranged by legal description (parcel number, section number, lot/block number, etc.) within each township. You must know legal description of the property to be effective in your research.
Even though taxes were collected each year, not every tax roll survived and made it to an archive. After 1900, only those years ending 0 and 5 were saved.
