The topographic map is derived from a monochrome NASA Geotiff map.

Discussion

The "spiral" texture on the two polar maps is due to the lighting azimuth being defined with respect to local north and not across the entire map. Because of the moderate crater saturation on Mercury, the effect is not as pronounced as on crater saturated bodies.
